- 2-3 large sweet potatoes
- 2 Tbsp. honey
- 1/2 tsp. salt
- 2 Tbsp. olive oil
- Juice from 1 lemon
Preheat oven to 350 degrees Fahrenheit.
Peel and cut the sweet potatoes into 1-inch pieces and put in a 9×13 baking dish. In a small bowl, whisk together the olive oil, honey, and lemon juice. Pour the mixture over the potatoes and toss to coat. Sprinkle with the salt and bake, stirring occasionally, for about 1 hour, or until the potatoes are tender.
- I like to use freshly ground sea salt. The bigger chunks of salt provide nice pops of flavor which contrast perfectly with the sweetness of the honey.
